Cauliflower Fried Rice

Came home from working in the paddock today with an awful headache and have been having digestive problems this week. I didn’t even realise how much I have been consuming ginger … ginger in juices, ginger tea, ginger in pumpkin soup and now ginger in cauliflower fried rice!

So, what are the benefits of ginger?

The root or underground stem (rhizome) of the ginger plant can be consumed in many ways including powder, spice, fresh or in oil and many forms as I have described above. So, what does it help with?

  • Digestive problems including nausea, loss of appetite, motion sickness, nausea caused by cancer treatment, vomiting after surgery, gas, diarrhoea, IBS and associated stomach/abdominal pain
  • Inflammation including sore throats (tea is great!)
  • Absolutely great for the absorption of food!

Cauliflower Fried Rice, Turmeric, Ginger and Tamarin Almonds


(serves 2)


1 large cauliflower (grated)

1tbs cold pressed organic coconut oil

2tbs fresh ginger (grated)

2 tbsp turmeric

2 bunches coriander stems finely chopped and leaves chopped separately

6 kale leaves finely shredded

2 organic eggs, beaten

6 spring onions trimmed and finely sliced

1 bunch each parsley and mint, chopped

1 tbs tamarin or soy sauce

1 tbs mirin

2 handfuls tamari roasted almonds, chopped

lime juice to serve


What To Do

  1. Grate cauliflower until it looks like white rice.
  2. Heat coconut oil in fry pan over medium heat.
  3. Add turmeric, ginger, coriander stems and fry for few seconds until fragrant.
  4. Add kale, cauliflower and stir fry for few minutes until warm.
  5. Add splash water to the pan to deglaze.
  6. Add eggs and mix well.
  7. Add spring onion, coriander leaves, parsley, mint, tamarin, miring and fold though almonds. Finish with lime juice.


A warm, easily digestive dish that helps your immune system which needs support during these winter months and especially if you are stressed!
